Protein helps with weight loss, muscle building and muscle regeneration. And that’s not all, around 75% of our body dry matter consists of protein! Protein is the most important component of muscles, blood, skin, hair and internal organs. Protein consists of amino acids, eight of which are essential to life, but cannot be produced from scratch by the body and therefore must be supplied in our food.
Park Igls’ chef Markus Sorg understands protein supplementation means all of the foods that provide us with valuable proteins such as Tyrolean Alpine cheese, low-fat quark, mozzarella, trout fillets and turkey ham. Good vegetable protein sources include pulses, seaweed (chlorella), sprouted
grains, seeds and beans and soya products. The amino acids that make up proteins should only be consumed in a natural, easily digestible form. The lupin bean’s protein is considered particularly beneficial. Lupin protein is alkaline and it contains an optimum ration of all 20 amino acids, including the eight essential amino acids.
In the eight-stage Modern Mayr cuisine, supplementary protein and vegetables are served as soon as they reach stage two – the difference between this stage and the subsequent ones lies in the quantity. Modern Mayr Medicine’s diet concept is not about self-denial, starving yourself or calorie

Markus Sorg and his team surprise at the Park Igls Mayr clinic with dietary dishes of the highest culinary level, by combining new food combinations with high biological value and lots of creativity, for example by pickling, smoking or fermenting.
When guests are preparing meals at home, they should not fixate on ready-made products, but instead – inspired by their stay and cookery classes at Park Igls – implement their own ideas, i.e. cook! It’s very easy to get portions under control so long as they pay attention to their body’s satiety signals. This is something best learnt by having regular Mayr therapies.
Tip: Chlorella and vegetable spread
Ingredients: 150g floury potatoes, 150g broccoli, 150g avocado, ½ tsp chlorella powder, 1tsp maple syrup, 1 lime, olive oil, a touch of Dijon mustard, fresh herbs (parsley & chervil), salt, pepper & nutmeg
Method: Boil the potatoes in their skins, drain, peel and leave to cool slightly. Blanch the broccoli then plunge into iced water (to preserve its beautiful green colour). Remove the stone from the avocado and finely purée the flesh with the potatoes, broccoli and chlorella powder. Add maple syrup, lime juice, olive oil and seasoning to taste before stirring in the freshly chopped herbs.
