Summer salad recipes based on Modern Mayr cuisine

A green and delicious helping of health

Nothing symbolises summer, joie de vivre and freshness as much as salad. Crunchy, light and seasoned with sunshine, salads are the epitome of healthy eating. However, for the sake of our digestion, it’s best to avoid salads and raw foods in the evening. Chef Markus Sorg reveals his favourite recipes for unclouded summer delights!

Lettuce with seeds and herbs

  • 1 lettuce
  • 50g wholegrain bread, thinly sliced and toasted
  • 40g toasted pumpkin and sunflower seeds

Herb dressing

  • 1 good handful of fresh, mixed herbs such as parsley, basil, thyme, rosemary, sage, coriander
  • 150 ml olive oil
  • 50 ml vinegar
  • 100 ml water
  • 2 tbsp maple syrup
  • Herb salt, black pepper

Berry salad with olive oil

  • 200g mixed berries – redcurrants, cranberries, gooseberries – preferably the slightly tarter
    and firmer varieties as they’re easier to fold in and add freshness
  • 150 ml olive oil
  • Juice and zest of 1 organic lemon
  • Salt, pepper

Salad with ewe’s cheese and figs

  • 1 lettuce
  • 120g cubed feta cheese
  • 8 figs, peeled and quartered 10-12 small pickled artichokes, halved if necessary

Mustard dressing

  • 1 tbsp Dijon mustard
  • 1 tbsp tarragon mustard
  • 1 tbsp maple syrup
  • 150 ml rapeseed oil
  • 50 ml mild fruit vinegar
  • 100 ml water
  • Salt, pepper, freshly ground mustard seeds

Avocado and tomato salad

  • 2 avocados, peeled, stone removed and cut into thin wedges
  • 2 peeled and seeded sun-ripened tomatoes
  • Segments of 1 large pomelo or grapefruit

Citrus dressing

  • Juice of 1 grapefruit,
  • 2 limes and 1 lemon
  • 100 ml olive oil
  • 50 ml linseed oil
  • 50 ml vinegar (preferably citrus vinegar)
  • 2 tbsp maple syrup
  • Salt, pepper, ground coriander
